Toponin (PAT): A type of bread which comes in small, round, fat and slightly oval loaves. Its unit weight is between 70 and 100 grams, its crust is a golden brown colour and it has an armoatic flavour. The bread has a moisture content of between 20 and 30%. The same production technology can also be used to make other types of bread, namely Topo, ‘l Droné, and Grisa Lavà, which differ largely due to their final shape and size when put into the oven. Toponin is produced in Cuneo and the surrounding area.
