Sénateur: A pastel with a cylindrical form, also known by the name “Boton da Preive”, composed of liquorice, gum arabic, sugar and a natural violet flavouring. It takes its name from the fact that in 1857, before Italian Unification, the senators of the kingdom used to chew these rubbery pastels (the “senateurs”), to refresh their throats during the long speeches delivered in the Piedmontese Parliament.
