Polvere Lievitante (Baking Powder): A product based on bicarbonate of soda or ammonium and tartaric acid which, in the presence of water, creates carbon dioxide. It is used to render cakes, sweets and focaccia soft and porous and replaces natural yeast or artificial yeast.
